Chilli Prawn And Pea Stir-Fry

Chillies have been part of the human diet since ancient times. They are easy to grow and are health promoting. Chilli in the diet is known to assist weight loss, improve circulation and help decrease inflammation, among other things. More importantly, chillies are delicious! They add zing to otherwise plain recipes, turning a simple concotion into a mouth-watering masterpiece.

Our recipe for a Chilli and Prawn Pea Stir-fry is an example of this. This recipe is light and delicious but without the chilli, it wouldn’t have the same flavour profile.

It makes for a great weeknight dinner taking only 16 minutes to make and serving 4. The dish combines well with rice or noodles.

Chilli and Prawn Pea Stir-fry

Preparation time 10 mins

Cooking time 6 mins

Serves 4

Ingredients

25g fresh ginger
1 fresh red chilli
300g white cabbage
1 tablespoon olive oil or canola oil
1 teaspoon sesame oil
300g frozen peas
350g peeled cooked large prawns
4 tablespoons chopped fresh coriander

Step 1.

Peel and finely grate the ginger. Chop the chilli into slivers and discard the seeds. Slice the cabbage into thin strips, about 3mm wide.

Step 2.

Heat the oils in a large frying pan over high heat. Stir-fry the ginger and chilli for a few seconds, then add the peas. Stir-fry for 2 minutes or until they are completely thawed.

Step 3.

Add the cabbage to the pan and stir-fry for 3 minutes. Add the prawns and cook for 1 minute to heat them through. Toss in the coriander, stir, then serve immedtiately.
