Cheesy Potato Puffs Recipe

Potatoes are an extremely popular vegetable due to their low price, versatility and awesome taste. As one of the world’s most important food crops, the humble spud has made its way into hundreds of different cuisines. That’s a lot of potato recipes!

Indeed, with all the potato recipe inspiration there is floating around the web, it can be hard to decide what to cook.

In this blog we share an easy potato-based recipe that never fails to please: Cheesy Potato Puffs.

This recipe uses simple ingredients, takes 35 minutes to prepare and serves 4 to 6 people.

Cheesy Potato Puffs

Preparation time 20 mins

Cooking time 15 mins

Serves 4 to 6

Ingredients

500g all-purpose potatoes, boiled and mashed until smooth
4 spring onions, finely chopped
½ cup mature cheddar cheese, finely grated
3 Tbsp milk
1 Tbsp butter
Freshly grated nutmeg, to taste
2 eggs, separated

Step 1.

Preheat the oven to 220ºC. Grease a 12-hole non-stick muffin tin, also greasing the flat sections of the tin in between the holes.

Step 2.

Combine the mashed potato with the spring onion and cheese in a large bowl.

Step 3.

Put the milk and butter in a small saucepan and warm gently. Add the nutmeg then season with salt and pepper, swirling the pan to help melt the butter. Heat to just below boiling point, then beat into the potato mixture before beating in the egg yolks.

Step 4.

Whisk the eggwhites until soft peaks form. Stir a spoonful or two into the potato mixture to loosen it, then fold in the rest as lightly as possible.

Step 5.

Spoon the mixture into muffin tins and bake for about 15 minutes, or until golden brown and well risen.
