Bourbon & Orange Marmalade Glazed Leg Of Ham

Classic and festive, ham is a crowd pleaser that makes for very popular leftovers the next day. Follow this recipe for a delicious Bourbon & Marmalade Glazed Leg of Ham that’s ready in two hours and serves a dozen.

Serves 10 to 12

Ingredients

1 cup firmly packed brown sugar
1 cup orange marmalade
½ cup bourbon
1 Tbsp Dijon mustard
8kg whole leg of ham on the bone
1 Tbsp whole cloves

Step 1.

Preheat the barbecue on low to medium heat, about 160°C. Line a large roasting pan with baking paper and add a wire rack.

Step 2.

For the glaze put the sugar, marmalade, bourbon and mustard in a deep saucepan and stir over a medium heat until the sugar is dissolved and the mixture comes to the boil. Reduce the heat to low and simmer for five minutes. Cool.

Step 3.

Prepare the ham for glazing. Put it on a large chopping board and cut around the shank of the ham in a decorative zigzag pattern about 100mm from the end of the shank. Remove the rind from the ham by running your thumb around the edge under the skin at the widest end and gently pulling the rind back over the shank. Discard the skin.

Step 4.

Cut a diamond pattern into the fat of the ham using a small sharp knife. Put the ham on the wire rack in the prepared roasting pan.
Brush the glaze generously over the ham. Insert a clove into the centre of each diamond. Roast i the barbecue for 40 minutes, brush with glaze and cook for a further 40 minutes or until ham is glossy, sticky and golden. Transfer the ham to a large serving platter and stand for 10 minutes before slicing.
